La Gallina Mediterranean Eatery and Bar, opening in Lynnfield this summer, is seeking a motivated restaurant and culinary professional ready to join a small but mighty team. The restaurant’s partners, Matthias Kiehm and James Wierzelewski, are hospitality and real estate industry experts with decades of experience. We are looking for passionate, creative thinkers to build this new restaurant together. We seek a Head Pizza Chef to join our kitchen team and lead the way to making delicious pizza based on both traditional and modern recipes.

Who Are We Looking For?

You are a pizza chef with leadership aspirations who is eager to manage other cooks across disciplines and shape our approach to pizza as a part of our menu. You have experience following established recipes while developing delicious, seasonal, and profitable recipes of your own. You know how to make and work with pizza dough to ensure and reproduce a high-quality product. You have an intrinsic desire to perfect our pizza offering as a distinct aspect of our guest experience (after all, our gorgeous pizza oven has a place of honor for a reason!).


  • Lead our pizza program in its entirety by leveraging experience and expertise in pizza making
  • Develop, implement and monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is well presented
  • Review menus and analyze recipes to determine labor and overhead costs and assign prices to menu items in cooperation with the Executive Chef
  • Assume responsibility for pizza quality for ensuring ingredients are stocked before service, and break down is properly conducted
  • Apply a variety of techniques to create our unique approach (including but not limited to yeast, sourdough starters, and bigas to make pizza doughs) and manage the baking of pizza in a heart-style oven
  • Understand bakers’ ratios used for hydration percentages in pizza dough with familiarity with fermentation and proofing of pizza dough
  • Maintain the pizza oven and equipment used in their station and the ability to open and stretch the pizza dough into the needed shapes with theatricality
  • Perform purchasing and inventory responsibilities on a daily/weekly/monthly basis
  • Fill in where needed to ensure customer service standards and efficient operations
  • Investigate and resolve customer complaints regarding food quality and service
  • Build and communicate work schedules for pizza cooks within station

Qualifications & Skills

  • Two to three (2-3) years of experience in pizza-making and kitchen leadership in a culinary environment
  • Experience in opening restaurants preferred
  • Background in modern Mediterranean and American cuisine preferred
  • Advanced knowledge of culinary, baking and pastry techniques
  • Thorough knowledge of food preparation techniques and food hygiene practices
  • Basic understanding of Health and Safety, Food Hygiene and Employment legislation
  • High School Diploma or equivalent
